New Mexico is known for its abundant sunshine as well as extreme shifts in weather patterns and temperatures. At certain times of the year, the temperature can swing 40 or 50 degrees in one day! New Mexico also contains several microclimates that influence what is grown and when. Located in Northern New Mexico, SASC Alcalde researches and experiments with food cultivation and production within the given weather and climatic conditions.
